RABBDI – THE SWEET


Ingredients: - (Servings for 2)
                                                1. Milk                                      – 1 litre
                                                2. Sugar                                    -- 1 & 1/2 cups  
                                                3. Cashew & Raisins(Kismis)    -- To garnish
                                                4. Cardamom  powder             -- a little.
                                                                                                           
Method:-
Step 1: Boil milk in a heavy bottom vessel or non-stick kadai.
Step 2: When the milk thickens add sugar to it and stir it well. keep the flame in simmer.  
Step 3: Patience is virtue. Stir continuously, until the colour changes to pale yellow and the mixture will be  
            semi-liqiud.
Step 4: It should be in pouring consistency only. if it is done remove from fire and allow
             to cool.       
Step 5: Add cardamom powder to it.
Step 6: Refrigerate the mixture(don't freeze), add chopped cashews and raisins to it.
Step 7: Serve cool or hot as per your wish. Also goes very well with ice-creams and
 gulab jamuns.
